Indeed at each time you edit a share or an user account, this file is overwritten.
Note: maybe it was not a good idea to upgrade to bigsur because on this OS version there are big changes on TM service
Where did you find this information about metadata option because currently smb.conf uses the options as described in the related samba page:
https://www.samba.org/samba/docs/current/man-html/vfs_fruit.8.htmlSo that you may check what fruit options should be used on your mac OS, I created a small ini file in the share fvdw : smbTM.ini. (of course you need to keep its syntax).
On each option, you have a comment line which lists the authorized values. I also added a new option: veto_appledouble because if you do not use the default value with the option resource you have to disable veto_appledouble.
So edit the values in smbTM.ini and samba server will use them as soon as you edit a share (open any share and do a submit)
Note: if you use bad settings, you may also need to abort the samba process after editing a share:

To install the test patch, do

Note: this patch includes also the fix for TM size bug
