Data transfers between two fvdw 5Big2 NAS

Is it possible to direct connect the second ethernet ports on two 5Big2 NAS running fvdw firmware with UTP to improve data transfer rates?

Yes you can do that, see help on system management> lan setup

Remark, transfer speed will not improve a lot, main limitation regarding transfer speeds are cpu speed and available ram.

Using smb4 is recommended to get max transfer speed.

All assume you use gigabit network

smb4 is enabled and it is GB network.
Am I correct in assuming that I plug a cable into LAN 2 on NAS 1 and connect the other end to LAN 2 on NAS 2 and configure both NAS under bonding as "Load balancing distributes traffic over both LAN connections"?

No thats not correct, both lan1 and lan2 from each nas must be connected to your router or a network switch that is connected to your router.
