My NAS is hosting the files for my Plex server but the server runs on another PC the NAS is only acting as file storage. I don't think it should matter but I can shut down my Plex server until this process is needed if it is slowing it down.

Anyhow you can easily check that! So repeat first 2 or 3 times the command

cat /proc/mdstat
. This will give you an average speed. Then stop plex (or maybe unmount the nas sharing) and wait around 1 or 2 minutes. Repeat the command

cat /proc/mdstat
and check if the speed is faster

Ok. I did as you said and It didn't seem to make much difference if my plex server was running or not. I got between 3300k/s and 3000k/s before and after shutting down my plex server.
